This recipe works great as an appetizer for a dinner or cocktail party — try them for a holiday get together as an addition to or replacement for a cheese plate. The sweet dates and honey are contrasted with tart goat cheese and earthy herbs all finished off with a delicately crunchy pecan. They are perfection and they are easy!
4 ounces herded goat cheese
15 - 18 Medjool dates
15 - 18 pecan halfs
honey for drizzling
Using a fork, crumble the goat cheese in a small bowl ensuring the herbs are evenly distributed. Set aside.
Slice the dates in the center and remove the pit. Using a small spoon, fill the center with the goat cheese and set in a serving plate. Once all the dates are filled, top each one with a pecan half, drizzle lightly with honey and serve.
